Middle bacon is cut from the side of the pork. It combines both the loin and the belly (i.e. back bacon and streaky bacon) and is served with the rind left on.

Appleton’s Plain Dry Cured Middle Bacon is a carefully chosen cut that captures the perfect blend of meat and fat. It’s the best of both worlds, where those partial to streaky bacon can have their fill and those who prefer back bacon don’t miss out.

Our traditional dry curing process, using just salt and a touch of seasonings, enhances the natural taste of the pork, resulting in middle bacon that cooks up to a delightful crispness without unnecessary shrinkage.
