Pork ribeye is a well marbled cut that is lovely and tender. We marinate ours in a mix of coffee and juniper, just enough to bring out the flavour without masking the meat. Good on the grill or in a hot pan.
Cook over a medium to high heat for 4 to 5 minutes per side, depending on thickness. Rest before serving. Good with potatoes.
