All the flavour of rib, prepared for easy carving. We take the rib off the bone, trim it and roll it by hand. Native breeds, dry aged for depth, from farms around Ripon, including our own herd of native Herefords. A fine roasting joint with rich, beefy flavour and a good layer of fat to keep it tender as it cooks.
