We spatchcock a half chicken by hand, then coat it in our own peri peri marinade. It’s got heat, but not too much – just enough to keep things interesting. Ideal for the barbecue or oven. Cooks evenly and quickly thanks to the spatchcock cut.
Best cooked at 200°C for 35–40 minutes, or until the juices run clear. Let it rest before serving. Great with chips, rice, or a simple salad.
